Namak Pare - Easy munching
Namak Pare is a widely loved snack to have as well as prepare in bulk and keep it for a couple of days. Also known as nimki, it was a good way to pass some time by making these in our childhood. As it needs a good kneading effort, our Mom used to prepare the dough and give to us in parts for some more kneading and we were also very excited to cut the rolled dough to different shapes .
Even after we grew up and moved to different cities to start our careers, our Mom used to prepare these in lots and pack it up for us and that really was a saviour in PGs with the not-so-good food we used to get.
These can also be coated with sugar syrup to prepare shakkar pare, if you have just added salt in the dough and no other spices.
Dough:
- Take around 1 cup of all purpose flour and add 1tsp kalonji seeds , 1tsp salt and 1/2 tsp red chilly powder(optional) . Mix well.
- Add ghee to the flour and mix till it gets a bread crumb like texture . Form a ball with your palms and check if it holds shape. If not, add some more ghee.
- Add water and knead to a tight dough. Knead it for at least 10-15mins to get the perfectly flaky nimkis. Keep it covered for at least 30mins.
- Take a ball and roll it like a chapatti. Keep it a little thick. Cut it into diamond shaped pieces and deep fry in oil in a low flame. While it gets a light brown colour , remove it .
- Keep in an air-tight container and stays good for up to a month.
