Vegetable Fried Rice
Rice being a staple food in most of the states, there are numerous varieties of rice dishes across the
country. Ranging from spicy and tangy rice varieties of southern part of India to mildly spiced varieties of northern part of the country, we have a huge collection.
And then comes the fusion, the Indo Chinese one 😉 One such dish is the Vegetable Fried Rice which is a complete meal in itself .
Its an easy stir fried rice with lots of veggies. You can add your choice of vegetables, or add scrambled eggs or fried chicken pieces to make it an egg or chicken fried rice.
Quick Recipe
- Soak rice in water for 20 mins.
- Either boil rice in a pot or pressure cook with a spoon of oil, salt and a spoon of lemon juice.
- Cool the rice completely to avoid breaking or turning mushy. Mix some oil to keep the grains separated.
- Heat oil in a wok and add chopped onion and garlic. Fry for a minute on high flame.
- Add chopped spring onions, beans, carrots, cabbage, capsicum and fry it just for a minute. The vegetables should still be crunchy.
- Add 2 spoons of soya sauce and a spoon of vinegar. Mix well and add the rice.
- Add salt according to taste after mixing the rice well with the vegetables. Add pepper powder to it .
- Switch off the flame and top it up with chopped spring onions .
- Ensure to do all the cooking in high flame and avoid cooking for long.
Serve with some ketchup or some chilly vegetables recipes.
